lemon white chocolate cookies
um these were awesome. i made them for easter.
- 1 cup white sugar, divided
1 lemon, zested
½ cup unsalted butter, soft
1 egg, room temperature
½ teaspoon vanilla
2 teaspoons lemon juice
1 ½ cups flour
¼ teaspoon salt
1 teaspoon cream of tartar
½ teaspoon baking soda
3 ounces white chocolate, chopped
mix together 1/4 cup of sugar with 1 teaspoon of zest. use your hands so the oil from the zest gets mushed all over the sugar. yeah, mushed. set aside. next, in one bowl mix together flour, salt, cream of tartar & baking soda. in another bowl mix butter & 3/4 cup sugar together. a fork works best. mix in the egg (use a spoon or spatula now). then vanilla, lemon juice & whatever zest is leftover. add the flour mixture a little at a time. stir to combine. stir in the white chocolate & then chill the dough for an hour or 2. now bake em. preheat the oven to 350∘. break up the lemon sugar with a fork because it’s probably stuck together by now. roll the dough into golfball-ish size balls & then roll in sugar. put them on a parchment lined cookie sheet & press down a little. they spread quite a bit so leave some room. bake for 10-12 minutes & then let them cool on the sheet for a few before transferring to a wire rack.
makes 24-ish if you make them just a bit smaller than the ones in the photo. i got 22.
