cornmeal peanut butter cookies

adapted from dyln

    ¾ cup unsalted butter, softened
    ½ cup peanut butter
    ¾ cup brown sugar
    ½ cup granulated sugar
    2 eggs (i used 2 tablespoons ground flax seed)
    1 ¾ cups all purpose unbleached flour
    ½ cup yellow cornmeal
    1 teaspoon baking powder
    1 teaspoon salt
    ¼ cup salted peanuts
    ¼ granulated sugar

preheat the oven to 350º and line baking sheets with parchment paper.

mix together butter & peanut butter until completely combined, add sugars & beat until fluffy. add eggs.
sift together flour, cornmeal, salt & baking powder, combine all & mix well.
grind in a food processor (or coffee grinder) peanuts & remaining sugar.
shape dough into balls & roll in peanut sugar. bake for 10-12 minutes.

makes about 4 dozen.

    wow that was fast! i’m still fighting with the template before i make the blog public. trying to integrate into my current site is a nightmare. the cookies were awesome!
