almond butter, oats & chocolate chip cookies

this is based on my favorite ccc recipe but with oats & almond butter added.

    4 tablespoons unsalted butter
    ⅔ cup brown sugar, packed
    ¼ cup granulated sugar
    ½ cup almond butter (or peanut, whatever. i’ve always used natural so i’m not sure what will happen if you use jif, just sayin’.)
    ½ teaspoon vanilla
    1 egg
    ¾ cup flour (any flour works, i’ve used both whole wheat & ap.)
    1 teaspoon baking soda
    ½ teaspoon salt
    ½ teaspoon cinnamon
    1 cup oats
    ¾ cup semisweet chocolate chips

preheat oven to 350˚f.

combine flour, baking soda, salt & cinnamon in small bowl. melt butter in a large bowl on low in the microwave, or on the stove if you feel like getting a pan dirty. add the almond butter, brown sugar, granulated sugar and vanilla extract & whisk until smooth. add the egg & whisk until fully mixed in. stir in flour mixture with a spatula. stir in the oats & chocolate chips.

roll the dough into balls a bit smaller than golf balls & place onto baking sheets lined with parchment paper. give em some room, these spread a bit. (also fyi this dough is pretty greasy if you use natural almond butter, don’t be turned off though, the cookies are not greasy at all!) bake for 10 minutes or until light brown around the edges. cool on the pan 5 minutes before transfering to paper towel on the counter to cool completely.

makes ~2-3 dozen depending on how big you make them.
